Healthy Pumpkin Spice Latte

Yields: 1 latte

INGREDIENTS

1cup (240mL) non-dairy milk (or full fat organic dairy if you prefer)

1 tbsp. (15g) pumpkin purée (not pumpkin pie mix!)

1 tbsp. honey or real maple syrup or 4 drops liquid stevia (adjusted to taste)

1/2 tap ground cinnamon

1/8 tsp ground nutmeg

1/8 tsp ground ginger

¾ cup (180mL) strong coffee, black tea, or rooibos

INSTRUCTIONS

Add the milk and pumpkin to a small pot. Heat over medium-low heat, stirring constantly with a whisk, until the mixture begins to simmer. Add in the sweetener and spices. Whisk (or use frother) the mixture until it becomes frothy.

Add the coffee or tea to a large mug, and pour the milk mixture on top. You can top with a sprinkle of cinnamon and/or some whipped cream or even whipped coconut cream if you want to get fancy.

Great recipe- super yummy. I add extra pumpkin and leave out the coffee/tea. My teenager loves it!
